Revisited Fried Potato with a Fried Egg and Veg

Leftovers are where it's at!

Leftovers are a great way of saving time and money. Make double and eat the same thing the next day or shake it up and adapt your dinner.

I used the potatoes dish I made the day before, but cut up the potatoes and fried them with a little bit of butter until brown and crispy to make little wedge thingys (always a winner). I then fried an egg, although this time not very successfully. Once the egg and potatoes were cooked I added the rest of the left over veg, boiled some peas and carrots and tada-no longer than 20 minutes!
