‘Epic’ Chicken Salad

'Epic' Chicken Salad

Night in, so me and a flatmate decided to make a luxury salad. Not exactly top budget food, but delicious!
We had two peppers to use up, so I cut them into slices and put them onto a baking tray with 10 halved cherry tomatoes and a splash of oil in the oven at 200c for 20 minutes. When the peppers were nearly done fry some cooking (raw) chorizo until some of the oil is starting to run into the frying pan. With that oil I cooked the chicken breast. When the chicken was white all the way through and brown on the outside I added some sundried tomatoes, cut into small pieces and squares of old french bread with a splash of olive oil. Let them all fry for a while longer until the bread is looking crispy. Once all this is done, cut up some cos lettuce and then in my wok, the only large serving dish in the flat, add the lettuce, peppers and meat mixture. A sure way to beat freshers flu!
