Perfect when you’re hungry but wanting to be a little bit healthier!
Start by washing the sweet potato and peeling off any funny looking bits, then prick it with a fork and but it in the microwave for 8 minutes or until soft. Then place on a baking try, rub a little splash of olive oil and sprinkle a small amount of smoked paprika on the outside, season with salt and pepper and put in the oven at 180c for 15-20 minutes. When the potato is done, cut down the middle, grate on some Stilton (or whatever cheese is your favourite) and put back in the oven for a few minutes until the cheese is melted. Then season with pepper and smoked paprika and vegetable of your choice!
