Anchovy Pasta

Anchovies are a great store cupboard item. Although some people are put off them due to the strong taste, once added to food the taste is really subtle.
This recipe was inspired by Jamie Oliver’s Italian T.V programme. The Italians really know how to do delicious simple food.
Start by putting the pasta and broccoli onto boil. Then fry courgette slices in a splash of oil. Once they are browned add two crushed garlic cloves, turn down the heat before you add the garlic as it can burn easily. Now add half a small jar of anchovy fillets finely cut and stir into the courgettes. Add the juice of half a lemon and lots of pepper (not salt as Anchovy are already quite salty!) Once the pasta and broccoli are cooked mix all together and enjoy!
P.S The Italians don’t mix cheese and fish as a general rule, but feel free to top with a bit of parmesan!
