You can’t beat a good chicken Kiev, quick, tasty and hassle free.
I cut up a red pepper, small onion and a carrot into strips and put on a roasting tray in the oven for half an hour with a little oil, salt and pepper. When the veg has been in for 20 minutes add a handful of spinach and mix in. Follow the cooking instructions for the chicken Kiev. (or make your own but that takes a bit more time…) Eat and enjoy!
