Photo does not do the meal justice! Trying to be a bit healthier this week so lots of vegetables.
I started by frying an onion, adding some mushrooms and aubergine with a splash of olive oil. I kept frying until they were all nice and golden brown. Then I added some tomato purée and a can of chopped tomatoes and mixed all together. I also added a can of (drained and rinsed) kidney beans. Then add some chilli flakes, salt, pepper and a little basil. Just before serving I stirred through some spinach. Boil the brown rice and enjoy!
