Cup of Tea Fruit Loaf (With Chocolate)

Hands down the simplest cake recipe I’ve tried, well I am yet to mess it up!
You will need:
-500gm Mixed dried fruit (needs soaking over night)
-250g (1.5 cups) caster sugar
-400ml cold tea
-1 egg
-500g (2 and a little bit more cups) self-raising flour
-250gm white chocolate
-1tsp mixed spice
-1tsp grated nutmeg

Put the mixed fruit, sugar and cold tea in a bowl. Stir well and leave over night. Then add the egg to the bowl of soaked fruit and beat in. Sift over the flour, mixed spice and nutmeg, and stir until the mixture is well blended and add chunks of chocolate and mix together. Don’t worry if you don’t have the spices, the cake will still turn out lovely.
Spoon into your cake tin and bake at 180c 1 hours, until firm to the touch allow to cool before serving.
