Sorry it has been a bit of a slow week for posts. Lots of food I had already made to eat!
Start by scrubbing a potato and pricking it. Then put in the microwave for 10 minutes and the oven at 220 for 10-15 minutes until the skin is crispy.
While the potato is cooking, fry a couple of slices of bacon cut into chunks and some courgette pieces until brown. Add 1 tsp of plain flour to the bacon an stir then add a splash of milk until it goes creamy. Feel free to add some cheese if you have some for extra flavour, I added a little bit of Stilton. Put the sauce on top of the potato and yum!
