I didn’t have any baby courgettes so I cut small slices from a whole courgette instead.
I started by cutting a leek into slices and fried in a casserole dish with 2 cloves of garlic until soft. I then added a grated courgette (just use a cheese grater) and continued to cook over a medium heat for a following 5 minutes. Add a splash of white wine if you have any left over. Then add roughly 150gm of orzo, but this quantity depends on how many people/meals you want to make. Add a veg stock cube and 300ml of water and put in the oven at 180 for about 15 minutes. Feel free to add breadcrumbs and parmesan on the top for a crunchy topping.
