Great dish when there is nothing left in the cuboard..
Start by frying an onion in some olive oil with a clove of garlic until soft. Then add 3 finely cut anchovy fillets until they go caramel. Add 1/1 tsp of chilli flakes, Italian herbs and caster sugar and stir. Now add a can of chopped tomatoes and a splash of water. Let the mixture simmer down for a few minutes on a high heat. In the mean time put the pasta on to boil. One the pasta is cooked drain and put in a oven proof dish and mix with the tomato sauce. Top with bread crumbs and paramsan and bake foe about 10 minutes in the oven at 180.
* To make your own breadcrumbs simple use a cheese grater and grate a frozen end of a loaf of bread, then put them in a food bag and freeze them so they are ready to go!
