I started with 500gm of beef mince in a bowl, which I mushed up with a wooden spoon until soft. I then added once finely cut rasher of bacon, 1 egg, and 2tsp of Italian herbs and mixed together. Use your hands to roll the meat into little balls. This should make enough for 3-4 people. Once all the meat is rolled leave on the side and start with the sauce.
Start by frying one onion, a clove of garlic and a chopped corgette in some olive oil until soft and looking brown. Then slowly add the meatballs, turning the until the whole surface is brown. Once brown put the meatballs in an oven proof dish. Add 1/2 tsp of chilli flakes, 1 tsp of Italian herbs and 1 tsp of tomato puree to the onions, stir and finish by adding a can of chopped tomatoes. Bring the sauce to the boil then add the the meatballs in the oven proof dish. Put in the oven for 10-15 minutes at 180c and serve with either pasta or spaghetti. Enjoy!
