Sorry I have been a bit slow with the posting, back to real life now so look forward to some yummy meals coming up that I cooked over christmas! This is a perfect dish for when you’re wanting to at least pretend that you have made an effort to be healthy.
Butternut squash, olive oil, balsamic, parma ham, red pepper, parmesan, spinach, rocket, cherry tomatoes, bread
Start by peeling and cutting up the butternut squash into cubes. Bake on a roasting tray along with strips of red pepper in the oven for roughly half an hour at 180c with a splash of olive oil. While the butternut is roasting, assemble some spinach, rocket, strips of parma ham and halved cherry tomatoes in a serving bowl. Once the pepper and the butternut is cooked, add to the salad warm top with a drizzle of olive oil, balsamic and some parmesan and serve with warm bread.
