Veggie Tomato Pasta

My new years resolution as awful as they are is to only eat meat on days when I exercise. Not only is this an incentive to exercise but eating less meat has a whole range of benefits from saving money, saving the planet, saving calories… But we will see how long this lasts!

Start by chopping a red onion and putting in a pan with a small splash of olive oil, cook for 5-10 minutes over a medium heat until they look nice and caramelized. Then add 2 crushed cloves of garlic, half a leek, half a red pepper, 2 tsp of tomato puree, 1 tsp of sugar, 1/2 tsp of Italian herbs and a sprinkle of chilli. Keep stirring on a medium heat for another 5 minutes at this point put your pasta on to cook. Add a tin of chopped tomatoes and bring the sauce to the boil. Leave bubbling away until the pasta is cooked and the sauce has thickened. Serve with a few fresh basil leaves and some ground pepper.
