Chicken Casserole

Chicken Casserole

olive oil, onion, carrots, garlic, chicken thighs, potatoes, green beans, bacon, red lentils, chicken stock, pepper, salt, white wine, italian herbs

Start by skinning and boning 3 chicken thighs. Once you have done this put the meat in a hot casserole dish with a generous splash of olive oil turn the meat until it is sealed. Then add, 2 sliced onions, a crushed garlic clove and 1 tsp of Italian herbs and turn the meat. After 5 minutes cooking add 2 sliced carrots, chunks of potato and turn the meat, add a splash of wine and allow to boil off. Once the wine has boiled add 2 tsp of chicken gravy granules and enough water to cover the meat. Allow to bubble away for the next 45 minutes. Then add 100gm of red lentils and season with salt and pepper. Put the lid on and allow to cook on a medium heat for a following 15 minutes. Serve with green beans.
