Lemon Drizzle Cake

Because it it now exam season and I am bored and constantly looking for something more exciting to do, what better procrastination than making a cake? Lemon drizzle is easy to do and very tasty. Also how nice is my mug? A christmas present off my sister in law.

Pre-heat the oven to 180c. Cream together 225gm of unsalted butter and 225 of sugar. Once the mixture if pale and creamy slowly add 4 eggs constantly whisking. Add the zest of one lemon and sift 225gm of self raising flour and fold into the mixture. Cook for 45 minutes or until a knife comes out clean. Once the cake has cooled slightly, make a few holes in the top with a fork and top with a mixture of 85gm of sugar and the juice of a lemon. The juice will then sink into the cake.
