Simple but a great way to cook eggs if you don’t want to cook them with any fat.
Start with a pan of simmering water, crack your eggs into a cup then pour them into the water one at a time. Keep the water simmering and the eggs should take 2-3 minutes to cook. Once they are done lift out of the water with a slotted spoon and dry on some kitchen roll, serve with toast and butter and lots of pepper.
