Super easy mid-week dinner and pretty healthy too, feel free to throw in any other vegetable you have. I served this with some spinach.
Start by putting the pasta on to boil, at the same time finely cut a red onion and fry on a medium heat for 2-3 minutes. Then add 1 clove of crushed garlic, and a grated carrot (just a potato peeler) and cook for another 2 minutes. Now add 1 tbsp of red pesto and stir together with the onion. Drain your pasta and mix all together and serve with a big bunch of bruised basil leaves and pepper.
