Curry is always great treat food but it is so much healthier and cheaper when you make it yourself. My new obsession is frozen spinach it is amazing! Only £1.50 and simply throw into any dish and you are good to go.
Start by chopping up 1 onion and 2 cloves of garlic and fry until soft on a medium heat. Add 5 tbsp of masala paste, there is a great Indian food store on the curry mile in Manchester that does it in little predone packets and the chicken until cooked. Tip in the tomatoes, 2 spinach balls, some frozen pepper, 2 tbsp of tomato puree and a splash of water if the curry looks a little dry. Allow to simmer for another 15 minutes and put the rice on to cook. Serve with mango chutney and enjoy.
