Carrot and Red Lentil Soup

Homemade soup is an all round winner. Great to use up slightly old vegetables, cheap, easy, health. The list can go on! Carrot and red lentil is a lovely combination just take care to not burn the cumin at the beginning.

Start with heating oil in a heavy based saucepan, add 1tsp of cumin seeds and 1/2 tsp of chilli flakes. Wait until the cumin starts ‘popping’ then take off the heat. Add 2 grated carrots (just use a cheese grater) and a vegetable stock cube. Mix all together and cover the mixture with water. Add 150gm of red lentils and bring to the boil until the lentils are soft. Add a splash of milk and a bit more water if you need to. Once the lentils are soft blitz the soup to your desired thickness and enjoy with a warm pitta bread and some pepper.
