Pancake

plain flour, eggs, milk, butter/oil, toppings of your choice

I know it isn’t pancake day just yet, but it is always handy to have a warm up. I always stick with lemon and sugar as a topping, but go wild! This should make enough for about 8-10 pancakes depending how big the pan is.

Start by sieving 110gm of plain flour into a bowl and make a well in the middle. Break 2 eggs in the middle and slowly mix together. Gradually add 200ml of milk, making sure the mixture is smooth and a pinch of salt. Heat your frying pan up and add some butter to the pan. Once the butter is melted pour a thin layer of the mixture in and after about a minute use a spatula to lift the sides and flip as I expertly (!) show in the high tech video!
