Chilli Con Carne With a Twist

Chilli Con Carne (no mince)

Chilli con carne is one of those dishes where your mum always does it best. However, it is also great because it is simple and really tasty to make. I found some beef brisket heavily reduced in Sainsbury’s so thought I would shake things up a bit and use some chunks of beef rather than the traditional mince.

Start by frying an onion in a heavy base sauce pan, add chunks of beef and cook until browned. Now add 1 tbsp of tomato puree and stir to this add 1 tsp of smoked paprika, 1/1 tsp chilli flakes stir on a gentle heat for a few minutes. Now add a tin of tomatoes, wash the tin out with a splash of wine and throw in. Put the rice on to cook and allow the chilli to bubble away on a medium-low heat for about 20 minutes adding more water if necessary. Add a tin of kidney beans, a couple of frozen spinach balls and a square of chocolate about 5 minutes before the end and put the broccoli on to cook.
