Start by peeling and cutting into a chunks a sweet potato. Put in the oven with a splash of oil of 10 minutes at 180c. Then add slices of red onion and a crushed clove of garlic. With the red onion add 1tsp of honey a squeeze of lemon and a little balsamic vinegar. Continue to cook at the same temperature for 15 further minutes. Once cooked sprinkle a generous serving of blue cheese on top while still warm and a few slices of sun dried tomatoes. Serve with orzo and salad dressing and generous amounts of salt and pepper.
