Start by gentle frying an onion, once soft add 2 tbsp of thai green curry paste and 2 tbsp of tomato puree. At this stage put the rice on to cook. Now add a can of coconut milk and stir. Let the curry simmer on a medium heat for 5 minutes then add mangetout, sweetcorn, prawns and frozen spinach. Cook on a medium to high heat for a further 10 minutes until everything is cooked and serve with salt, pepper and fresh coriander if you have any.
