Baked Potato with Coronation Chicken

Looks like a bit of a faff as the ingredient list is fairly long but it is relatively easy and is a really yummy dinner.

Start by putting the potato in the microwave for 10 minutes, then put in the oven until the coronation chicken is done. Gently frying an onion of a low heat, after about 5 minutes add chunks of chicken. Once they have sealed add 2 tsp of curry powder, 2 tbsp of tomato puree, raisins (if you like them) and a sprinkle of chilli flakes and mix together. Now add 100ml of wine and 100 ml of chicken stock and turn up the heat until boiling. The chicken will start to poach and keep cooking until the liquid is reduced by half. Allow the chicken to cool slightly and add 3 generous spoons of mayonnaise, but add more if you need. Stir in 2 tbsp of mango chutney, pepper and the juice of a lemon. Serve over a baked potato with salad and cheese.
