A bit of an indulgence meal but super tasty treat once in a while!
Start by gently frying an onion and a clove of garlic until soft. While the onion is cooking cut a slit in the middle of the chicken breast and stuff with cheese of your choice, I had some left over boursan and wrap with bacon. Add some single cream or double milk to the onion along with a pinch of chilli flakes, lots of pepper, some sweet corn and frozen spinach. At the same time put the rice on to cook and the chicken into an oven proof dish at 180C for 20-25 minutes until the chicken is cooked.
