Courgette and Mushroom Curry

Courgette, mushroom, onions, frozen spinach, tin of chopped tomatoes, sugar, oil, tikka masala paste, mangetout, rice

Super simple and quick. Perfect for using up vegetables and trying to get your 5 a day.

Start by gentle frying an onion, quartered courgette and sliced mushrooms. Once fried add 2 tbsp of masala paste and stir. Add a tin of chopped tomatoes, 1 tbsp of sugar and mangetout. Allow to simmer for 10 minutes and serve with rice.
