Super simple and quick. Perfect for using up vegetables and trying to get your 5 a day.
Start by gentle frying an onion, quartered courgette and sliced mushrooms. Once fried add 2 tbsp of masala paste and stir. Add a tin of chopped tomatoes, 1 tbsp of sugar and mangetout. Allow to simmer for 10 minutes and serve with rice.
