This happily fed 6 people and was super cheap as I bought the sausages reduced. Pasta bake is a great dish for a crowd. It is easy to make in advance the just heat up when people arrive, it is yummy, filling and cheap. The blue cheese I used is a block that I have grated and now keep in the freezer so it doesn’t go off-perfect!
Start by cutting the sausage into small slices and frying on a medium heat until cooked, add one sliced onion and keep moving the contents until the onion is soft. In the mean time put the pasta on to cook, make sure it is al dente as it will cook more in the oven. Add to the sausage 1/2 tsp of chilli flakes, 1/2 tsp of Italian herbs, 1 tsp of tomato puree stir then add a jar of tinned tomatoes and bring to the boil. Once boiling add the frozen spinach and sweetcorn. Drain the pasta and mix together with the sauce and season to taste. Pre heat the oven to 180c and put the pasta and sauce in an oven proof dish. Top with blue cheese and leave in the oven for 20 minutes until the top is melted and lovely.
