Really tasty and pretty healthy. I used chicken shreded from chicken legs and thighs. It is a bit tougher than chicken breast but also cheaper.
Start by marinading your chicken for a couple of hours in: lots of grated fresh ginger, 2 cloves crushed garlic, 1tbsp lemon juice, 1 tbsp soy sauce, 1 tbsp olive oil, pinch of chilli flakes, salt and pepper.
Make the mash by peeling a dicing sweet potato, boil for about 20 minutes or until soft then add a knob of butter and mash away. One the mash is nearly done start frying you chicken with all the juices of the marinade and an onion. One the chicken is cooked add 2 tbsp of mango chutney. Serve with vegetables of your choice.
