Sorry for the lack of posts, I have gone home for easter and my mum has slowly taken over the cooking!

Slight variation in the fact I didn’t have any eggs so used oil as a substitute. It did work but eggs would be preferable! I made on giant cookie due to the lack of a baking tray. This meant I had to let it set for about half an hour after cooking but it was pretty tasty.

Cream 125gm of butter with 125gm of sugar until pale and creamy, then add 1/2 cup of oil, 1 tsp of vanilla essence and 125gm of porridge oats and mix together. Sift in 150gm of self raising flour and mix until evenly combined and add 100gm of dark chocolate chunks. Bake at 180c for 15-20 minutes, lift out and allow to set for about half an hour before eating. You may need to rest on kitchen roll to soak up any excess oil.
