Happy Easter to everyone reading. Hope you have had a great weekend with some yummy food, I definitely have. Despite Easter now not having that many religious connotations for me, simnel cake is still a tradition. There are eleven marzipan balls, represent the twelve apostles, minus Judas for his betrayal. Just a little bit of history for you there…

Pictured is my Grandmas simnel cake, she is an amazing baker and the recipe is a closely guarded secret. However, the BBC recipe (link attached) is meant to be very good.
