Mussels in a White Wine Sauce

A reunion lunch with one of my best friends at university, so a bit of a treat. I bought pre-opened and cleaned mussels from the fish counter so I simply just had to make the sauce and reheat. I know yogurt isn’t really traditional but is a little healthier!

Start by slowly cooking an onion on a low heat, once soft add a crushed garlic clove. Now turn up the heat and add a generous splash of white wine and allow to reduce. At this stage add the mussels. Put the lid on the pan and allow to steam for 5 minutes. Next add 3 tbsp of greek yogurt lots of chopped parsley and serve with lots of crispy bread.
