Tomato, Mozzarella and Basil Salad

Tomato (either cherry or large of a mixture of the two), mozzarella, basil, balsamic, olive oil, sundried tomatoes, avocado, capers, sugar, salt, pepper, bread to serve

Now a bit of sunshine has finally hit England how better to celebrate than making a salad!

Bring all the ingredients to room temperature. Start by slicing the tomatoes and cover with a drizzle of balsamic, oil, pinch of sugar and salt. Add some teared up mozzarella, some sliced sundried tomatoes and cubes of ripe avocado. Bruise a handful of basil leaves and mix together with a sprinkle of pepper. This is great made about an hour before serving, as the tomatoes absorb the sugar and go all-lovely! Serve with bread if you’d like.
