Pork Medallions with Sweet Potato Wedges

One of my favorite dinners I have made for a long time, I bought the meat from Lidl and the dish actually came out at less than £2/head. Winning!

Peel the sweet potato and cut into wedge size chunks, scatter on a baking tray with a splash of oil and crumble a vegetable oxo cube over the top. Cook for 20-30 minutes. About 10 minutes before the wedges are done, gently fry an onion once soft add a clove of crushed garlic. Melt a small knob of butter and put the pork in to fry on a medium heat. Once the pork has been in for 2-3 minutes either side, add some chopped sundried tomatoes and lots of spinach. Coat the spinach in the juices in the pan and it will start to wilt down. Once done serve with wedges and vegetable of your choice.
