Tomato, Orzo and Mozzarella Salad

Orzo is a great store cupboard item, rice shaped pasta it works very well in dishes like salads. This recipe used orzo that has already been cooked. This recipe is very low maintenance, but requires a bit of pre thought, so start an hour before you want to eat.

If you have bought cheap mozzarella, ziz it up a little by draining, tearing into chunks and allowing it to soak in the juice of half a lemon, oil, salt and pepper. Oven roast some cherry tomatoes with a drizzle of oil and a sprinkle of sugar at 150 c for 15 minutes. Once cooked lift of the baking tray and put the pre-cooked orzo on the same baking tray, soaking up the juices. Cook the orzo for 10 minutes at 150 c. Make a dressing for the salad consisting of 1/2 a tsp of whole grain mustard, 1 tsp of olive oil and 1 tsp of balsamic and mix together the mozzarella, tomatoes, orzo and spinach to make a yummy, summery salad.
