One of the perks living in Manchester is the fantastic array of international foods available. Paneer is a soft Indian cheese and works beautifully in this simple and tasty veggie curry.

Start by heating oil in a heavy based sauce pan, add 1 1/2 tsp of cumin seeds, some chilli depending on how spicy you like it, 2cm cubed of ground fresh ginger and fry for about 30 seconds. Add 2 sliced large onions and fry for about 50 minutes until soft. Add 2 sliced peppers, a pinch of salt, 1/2 tsp of turmeric and a pinch of chilli powder and fry for another couple of minutes. Lower the heat and add the cubed paneer and three sliced large ripe tomatoes to the pan and stir together for about five minutes . Finally stir in 3/4tsp of garam masala and serve with rice and naan.
