Mac and Cheese

First off I hope you all had a great christmas and newyear! Sorry for the lack of Christmas posts.. I have been cooking lots of yummy things, but have been totally hopeless and photographing them.

Now the long cold month of January is ahead a good bit of classic comfort food is a winner and nothing says comfort food like macaroni cheese.

macaroni, cheddar (for a bit of a twist experiment with half cheddar and half blue cheese), milk, flour, bacon (optional), butter, tomatoes, pepper, nutmeg, chilli flakes

Start by putting your macaroni on to boil which should take less than 10 minutes. In the mean time fry a few slices of chopped bacon, when cooked add a small knob of butter, allow to melt then add a tbsp of plain flour and mix together. Depending of how much sauce you want to make, add more flour. Slowly add milk to the bacon and stir over a high heat, continuously adding milk until you have enough sauce to cover the macaroni. Now add a decent pile of grated cheddar to the sauce (leave a bit behind to cover the top at the end), 1 tsp of nutmeg, a generous amount of pepper and a little sprinkle of chilli flakes to add a depth of flavour and keep on a low heat. Once you macaroni is done drain and put into a dish, mix the sauce and top with the remaining cheese and some halved cherry tomatoes on top. Grill for a further 5 minutes until the cheese is bubbling away and golden brown.
