Proper Tomato Sauce with Pollock Wrapped in Bacon

pollock (or any white fish), bacon, tomatoes, tin of tomatoes, frozen spinach, black olives, garlic, oil, basil, capers, red wine, sun dried tomatoes (only if you have them already open), salt, pepper, chilli flakes, carb to serve with I went for garlic bread

I have recently bought a food processor, so as you might see from now on absolutely everything will be whizzed! This is a super quick tomato sauce, that requires no cooking or faffing about but is really yummy. Sorry the photo is awful!

Start by putting tomatoes in the oven at 180c with a little oil and sugar for about 20 minutes. When they are soft put them in a food processor with 2 cloves of garlic, a tin of tomatoes, splash of wine, a tsp of capers, tsp black olives, 1/2 tsp of chilli flakes, a few bundles of frozen spinach, 4-5 sundried tomatoes and season with salt and pepper and a drizzle of olive oil. If you want the tomato sauce to have a bit of a fisher flavour add a fish stock cube here. Then place the sauce in a pan with a lid that can go in the oven (or a dish and cover with foil). Put the sauce in, the the pollock wrapped in bacon. Heat through for 20 minutes until the fish is cooked and serve with carb of your choice and a bit of fresh basil.
