Pesto Coated Cod with Harissa Veg

Super quick, healthy and very tasty. Although with pesto and harissa it is quite oily so you don’t need to add any more oil while cooking but a nice way to put a twist on oven cooked veg. Simply omit the chorizo for a meat free version.

frozen white fish (any will work), pesto, carrots, sweet potato, onion, kale, broccoli, chorizo, harissa, salt, pepper


Start by defrosting a piece of white fish, I used cod but any type works well. Now peel a carrot, sweet potato and an onion and slice into batons. Arrange on a baking tray with a handful of kale, some broccoli, some sliced chorizo if you are feeling fancy and a tbsp of harissa mixed in with the veg. Top the fish with a thin layer of pesto and place on the baking tray and cook at 200c for 20 mins, season and enjoy.
