A great quick and different lunch idea. Used up store cupboard stuff which is always handy and was seriously delicious!
Wholemeal tortilla, onion, garlic, sundried tomatoes, black olives, harrisaa, cumin seeds, tomato puree, sunflower seeds, sweet chilli sauce, cheese, salad to serve
If you use a large frying pan for this you can warm the tortilla in the pan absorbing some of the the yumminess. Start by slicing and frying an onion and a crushed cloves of garlic, add 1tsp of harissa after a few minutes and 1/2 tsp of cumin seeds. Keep stirring and add a few sliced sundried tomatoes, 1 tsp of tomato puree, some sliced black olives, and a few slices of whatever cheese you have into the pan on top of the onions until it goes nice and soft. At this stage warm the tortilla in the pan (you may need to do half at a time). Once warm pile all the lovely onion mix on top of the tortilla, a dash of sweet chilli sauce works well as does a sprinkle of any seeds. Serve with salad and enjoy.
