Sorry for the hiatus, have been in hospital with a kidney infection that knocked me for a few weeks then exams. Joys of being student huh?! Anyway, I’m back and to kick us off a seriously quick and easy dinner, this dish makes a great healthy alternative to a takeaway. All quantities are for one so just multiply as necessary.
pork chop, bell pepper, half an onion, clove of garlic, oil, soy sauce, honey, tinned pineapple, mango chutney, noodles
Start by chunkily chopping the onion, pork chop and pepper, fry in a large pan on a medium heat for 3-4 minutes until the pork is browning (at this stage put the noodles on to cook). Now add 2 rings of sliced pineapple, 2 desert spoons of the pineapple juice, 1 tsp of mango chutney, 1 tsp of soy sauce, 1 tsp of honey and a crushed clove of garlic. Turn up the heat until the pineapple juice is starting to bubble. Drain your noodles once they are soft and if you need a little more liquid add some of the noodle water. Add the noodles to the pork, mix together and serve.
