‘Reet Posh’ Mac n Cheese

Sometimes you just can’t beat comfort food. Here is classic but just a little tarted up and it tastes incredible!

pasta, cheese (mixture of blue and cheddar), milk, butter, flour, salt, pepper, nutmeg, chilli flakes, spinach, meat (I had some leftover chicken and a little bit of chorizo, just leave out for a veggie version)

Start by putting the mac onto cook following packet instructions. While the pasta is cooking warm through or cook any meat that you want to throw in. Now onto the sauce, melt a generous knob of butter, add a tbsp of plain flour, gradually add milk to the mix until you have a lovely creamy sauce. Now add 1/2 tsp of nutmeg and a generous shake of chilli flakes and pepper.  Sprinkle in a generous amount of any gratable cheese that takes your fancy. Once the pasta is cooked, mix the sauce, meat and pasta together. While it is still hot stir through a handful of spinach and serve, enjoy!

Summer Scallops


Now the sun is finally shining its is time for some good old fashioned summer food.

Scallops (I used frozen ones from Aldi and they were brill!), new potatoes, lemon, oil, garlic, salad

Start by cooking your new potatoes until soft and once done plate them up with some salady bits. To cook the scallops, heat up a frying pan with a generous glug of oil. Place the scallops in, I went for 2-3 minutes either side. When you turn the scallops throw in a clove of sliced garlic. Once the scallops are cooked, squeeze some lemon and oil over everything with a good grind of salt and pepper and enjoy.
