Now the sun is finally shining its is time for some good old fashioned summer food.
Scallops (I used frozen ones from Aldi and they were brill!), new potatoes, lemon, oil, garlic, salad
Start by cooking your new potatoes until soft and once done plate them up with some salady bits. To cook the scallops, heat up a frying pan with a generous glug of oil. Place the scallops in, I went for 2-3 minutes either side. When you turn the scallops throw in a clove of sliced garlic. Once the scallops are cooked, squeeze some lemon and oil over everything with a good grind of salt and pepper and enjoy.
