Avocado, Egg and Chorizo on Toast

Here I am channeling my inner Nigella, after watching her ‘cook’ avocado on toast as part of her new series.

However, the main reason I want to show you this is a brill new trick I’ve learned to keep the other half of the avocado fresh. Chop up about 1/3 of a red onion, place it in the bottom of a tupperware pot with a tight seal. Add the avocado and hey presto, fresh for another 4-5 days!

avocado, egg, bread, lime, chilli flakes, salt, pepper, chorizo, oil

Start by cutting the avocado in half, scoop out half the contents and mush with a fork in a bowl, adding a squeeze of lime and a sprinkle of chilli flakes. In the meantime, fry about 15 pieces of chorizo that have been cut into small quarters in a little oil. After a couple of minutes push the chorizo to one side in a pan and crack an egg.  Toast the bread, when toasted, generously spread the avocado on top. Once the egg is cooked place on top of the toast with the chorizo, season and enjoy

  1. This sounds seriously delicious – chorizo, eggs and avocado has to be my favourite breakfast combination. You can’t beat it! Thanks for sharing 🙂

    Have you tried Shakshuka? I tried my hand at making my own recipe this weekend and it was seriously delicious (blowing my own trumpet unashamedly!) it can also be made pretty cheaply so would make a good student dinner. Would love to hear your thoughts if it sounds like it could be up your alley 🙂 –
