Here I am channeling my inner Nigella, after watching her ‘cook’ avocado on toast as part of her new series.
However, the main reason I want to show you this is a brill new trick I’ve learned to keep the other half of the avocado fresh. Chop up about 1/3 of a red onion, place it in the bottom of a tupperware pot with a tight seal. Add the avocado and hey presto, fresh for another 4-5 days!

Start by cutting the avocado in half, scoop out half the contents and mush with a fork in a bowl, adding a squeeze of lime and a sprinkle of chilli flakes. In the meantime, fry about 15 pieces of chorizo that have been cut into small quarters in a little oil. After a couple of minutes push the chorizo to one side in a pan and crack an egg. Toast the bread, when toasted, generously spread the avocado on top. Once the egg is cooked place on top of the toast with the chorizo, season and enjoy
